  • 1 cup (200g) packed brown sugar
  • 1 large egg

  • 1/2 cup (120ml) apple cider (reduced to 1/4 cup)
  • 1/2 cup (120ml) buttermilk
  • 4 ounces (113g) cream cheese, softened
  • 1/4 cup (60g) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups (180g) powdered sugar

Instructions

  1. Reduce the apple cider: In a small saucepan, simmer 1/2 cup (120ml) of apple cider over medium heat until it reduces to 1/4 cup. Set aside to cool.
  2. Prepare the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream the butter and sugar: In a large mixing bowl, use a hand or stand mixer to beat the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add wet ingredients: Beat in the egg, vanilla extract, and cooled apple cider reduction until combined.
  5. Mix the batter: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined—don’t overmix!
  6. Portion and bake: Scoop tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart. Bake at 350°F (175°C) for 10-12 minutes, or until the cakes spring back when lightly touched. Cool on a wire rack.
  7. Make the filling: In a medium bowl, beat the cream cheese, butter, vanilla, and cinnamon until smooth. Gradually add the powdered sugar and mix until creamy.
  8. Assemble the whoopie pies: Spread or pipe the filling onto the flat side of half the cakes. Top with the remaining cakes to create sandwiches.

Notes

Don’t skip the cider reduction as it intensifies the apple flavor. Chill the filling if your kitchen is warm to make assembly easier. Use a cookie scoop for evenly sized cakes.
