This Bourbon Peach Upside Down Cake combines caramelized peaches, a hint of smoky bourbon, and a moist, spiced cake for a dessert that’s indulgent yet approachable.

Ingredients

Scale
  • 34 medium peaches, peeled and sliced (about 1/4-inch thick)
  • 1/3 cup unsalted butter
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons bourbon (optional)
  • 1 1/2 cups all-purpose flour (or use gluten-free flour for a GF option)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or substitute with regular milk mixed with 1/2 teaspoon lemon juice)

Instructions

  1. Preheat the oven to 350°F (175°C) and place the rack in the center.
  2. In a cast iron skillet, melt the butter over medium heat. Stir in the brown sugar and bourbon until combined. Arrange the peach slices in a circular pattern over the caramel mixture. Remove from heat and set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined—don’t overmix.
  7. Carefully spread the batter over the peach topping in the skillet, smoothing it out with a spatula.
  8. Place the skillet in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the skillet for 10 minutes. Run a knife around the edges, place a serving plate over the skillet, and carefully flip to release the cake.

Notes

Use ripe peaches for maximum flavor. If fresh peaches aren’t available, canned or frozen peaches can work in a pinch—just make sure to drain them thoroughly. For a lighter option, reduce the sugar or skip the whipped cream topping.
