These caramelized crème brûlée cheesecake bites combine creamy cheesecake filling with a buttery graham cracker crust and a caramelized sugar topping. Perfect for parties, date nights, or a special treat.

  • 1 cup (120g) graham cracker crumbs
  • 2 tablespoons (25g) granulated sugar
  • 4 tablespoons (60g) unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (60ml) heavy cream
  • 1/4 cup (50g) granulated sugar (for caramelized topping)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
  2. In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until evenly coated. Divide the mixture among the muffin cups, pressing it down firmly. Bake for 5 minutes, then set aside to cool.
  3. In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and heavy cream until fully combined.
  4. Spoon the cheesecake filling over the prepared crusts, filling each cup almost to the top. Smooth the tops with the back of a spoon or an offset spatula.
  5. Bake the cheesecake bites for 15-18 minutes, or until the centers are set but slightly jiggly. Remove from the oven and let them cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  6. Refrigerate the cooled cheesecake bites for at least 2 hours or overnight for best results.
  7. Just before serving, sprinkle a thin layer of granulated sugar over each cheesecake bite. Use a kitchen torch to caramelize the sugar until golden and bubbly. Let it cool for 1-2 minutes to harden.

Notes

Ensure cream cheese is fully softened to avoid lumps. Chill the bites thoroughly before caramelizing the sugar topping. If you don’t have a kitchen torch, use your oven’s broiler to caramelize the sugar.
