  • 1 pound sirloin steak, cut into bite-sized pieces
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/3 cup beef broth
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Cut the steak into bite-sized pieces and season generously with salt and pepper.
  2. Heat 1 tablespoon olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add the steak bites in batches to avoid overcrowding. Sear each side for 2-3 minutes until browned. Remove from the pan and set aside.
  3. Lower the heat to medium and add the remaining 2 tablespoons of butter. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Pour in the beef broth and scrape up any browned bits from the pan. Stir in the heavy cream and let the sauce simmer for 3-4 minutes until slightly thickened.
  5. Return the steak bites to the skillet and toss them in the sauce. Let everything heat through for 1-2 minutes.
  6. Garnish with fresh parsley and serve immediately.

Notes

Cook steak bites in batches to avoid overcrowding. Use fresh garlic for the best flavor. If the sauce isn’t thickening, simmer longer or add a cornstarch slurry.
