  • 8 ounces oyster mushrooms, torn into bite-sized pieces
  • 3 cloves garlic, finely minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the oyster mushrooms and sautΓ© for 5-7 minutes, stirring occasionally, until golden and tender.
  3. Reduce the heat to medium-low and add the minced garlic. SautΓ© for 1-2 minutes, stirring constantly, until fragrant. Be careful not to burn the garlic.
  4. Pour in the heavy cream and stir to combine. Let it simmer for 2-3 minutes, allowing the flavors to meld together.
  5. Add 1/2 cup of the reserved pasta water to the skillet and stir. This will help thin the sauce and make it cling to the pasta.
  6. Stir in the grated Parmesan cheese and butter. Continue stirring until the cheese is melted and the sauce is silky smooth.
  7. Add the cooked pasta to the skillet and toss to coat evenly in the sauce. If the sauce feels too thick, add a bit more pasta water, 1 tablespoon at a time.
  8. Season with salt and black pepper to taste. Sprinkle with chopped parsley and serve immediately.

Notes

Use fresh ingredients for the best flavor. Save pasta water to adjust sauce consistency. Avoid overcooking garlic to prevent bitterness.
