  • Panko breadcrumbs
  • 2 eggs, beaten
  • All-purpose flour
  • Salt
  • Pepper
  • Mayonnaise
  • Sriracha
  • Sweet chili sauce
  • Lime juice
  • Optional garnishes: chopped green onions, sesame seeds, or cilantro

Instructions

  1. Cut salmon fillets into bite-sized cubes, about 1-inch pieces. Pat them dry with paper towels and season lightly with salt and pepper.
  2. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Dip each salmon cube in the flour, then the egg, and finally the panko breadcrumbs. Press gently to ensure the panko sticks evenly.
  4. For baking: Preheat oven to 400°F (200°C). Arrange breaded salmon bites on a greased or parchment-lined baking sheet. Bake for 12-15 minutes, flipping halfway through, until golden and crispy.
  5. For frying: Heat oil in a skillet over medium-high heat. Fry salmon bites in batches for about 2-3 minutes per side, until golden brown and cooked through. Drain on paper towels.
  6. Make the Bang Bang sauce by whisking together mayonnaise, sriracha, sweet chili sauce, and lime juice in a small bowl. Adjust the heat level to your preference.
  7. Serve the salmon bites drizzled with sauce or with sauce on the side for dipping. Garnish with green onions, sesame seeds, or cilantro.

Notes

For extra crispiness, use a wire rack when baking. Adjust the sauce’s spiciness by modifying the amount of sriracha. Ensure oil is hot enough when frying to prevent soggy coating.
