  • 2 large eggs, room temperature

  • 1/4 teaspoon salt
  • 8 ounces (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 1 cup (150g) fresh or frozen blackberries
  • 2 tablespoons granulated sugar
  • 1/2 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
  2. In a small saucepan, combine blackberries, sugar, and cornstarch. Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens (about 5-7 minutes). Let it cool slightly.
  3. In a mixing bowl, whisk together melted butter and sugar. Add eggs and vanilla extract, whisking until smooth. Stir in cocoa powder, flour, and salt until a thick batter forms. Spread evenly into the prepared pan.
  4. In another bowl, beat cream cheese and sugar until smooth. Add the egg and vanilla, mixing until fully incorporated. Spread the cheesecake mixture evenly over the brownie batter.
  5. Spoon the cooled blackberry sauce onto the cheesecake layer in dollops. Use a skewer or knife to swirl the sauce into the cheesecake, creating a marbled effect.
  6. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Cool completely before slicing.
  7. For clean slices, chill the brownies in the fridge for an hour before cutting.

Notes

For best results, use room-temperature eggs and cream cheese. Don’t overmix the brownie batter to keep it fudgy. Chill the brownies before slicing for clean cuts.
