  • 1 cup (125g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups (300g) fresh or frozen blueberries
  • 1/4 cup (50g) granulated sugar
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, and softened butter. Mix until crumbly and well combined. Press the mixture into the bottom of the prepared pan to form an even layer. Bake for 10 minutes, then set aside to cool slightly.
  3. In a separate bowl, beat the cream cheese until smooth. Add the sugar, egg, and vanilla extract, and mix until creamy and lump-free. Pour this mixture over the baked crust, spreading evenly.
  4. In a small saucepan, combine the blueberries, sugar, cornstarch, water, and lemon juice over medium heat. Cook for 5-7 minutes, stirring occasionally, until the mixture thickens slightly and the blueberries release their juices.
  5. Spoon the blueberry mixture over the cheesecake layer, ensuring even coverage.
  6. Return the pan to the oven and bake for 25-30 minutes, or until the cheesecake layer sets and the edges are lightly golden.
  7. Let the bars cool to room temperature, then refrigerate for at least 2 hours to firm up before slicing.

Notes

Use softened cream cheese for a smooth cheesecake layer. If using frozen blueberries, do not thaw them to avoid excess liquid. Refrigerate the bars after baking to allow the layers to set properly.
