  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced bell peppers (red, yellow, or orange)
  • 1/2 cup shredded carrots
  • 3 tablespoons low-sodium soy sauce (or coconut aminos for gluten-free)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 head butter lettuce (or Boston lettuce)
  • Optional toppings: sliced green onions, sesame seeds, crushed peanuts, sriracha

Instructions

  1. Wash and pat dry the lettuce leaves. Set them aside on a serving platter.
  2. Heat a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and fully cooked (about 7-8 minutes).
  3. Stir in the diced onion and minced garlic. Cook for 2-3 minutes until softened and fragrant.
  4. Add the diced bell peppers and shredded carrots. Cook for another 4-5 minutes until the veggies are tender-crisp.
  5. Stir in the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix well and let the flavors meld for 2-3 minutes.
  6. Spoon the turkey and veggie mixture into the prepared lettuce leaves. Add your favorite toppings like green onions, sesame seeds, or a drizzle of sriracha.

Notes

For extra flavor, add red pepper flakes or sriracha to the turkey mixture. You can make the filling ahead of time and reheat it when ready to serve.
