These irresistible salmon bites are seared until golden, then tossed in a sticky, sweet, and spicy hot honey glaze. Perfect as a party appetizer or a quick weeknight treat, they deliver bold flavor and a crowd-pleasing kick in just 30 minutes.

  • 1 lb skinless salmon fillet, cut into 1-inch cubes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons hot sauce (Frank’s RedHot, Cholula, or Sriracha)
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon butter
  • Juice from 1/2 lemon
  • Sesame seeds, for garnish (optional)
  • Fresh chives or green onions, for garnish (optional)

Instructions

  1. Pat salmon fillet dry with paper towels and cut into 1-inch cubes. Lay cubes on parchment paper for 5 minutes to air-dry.
  2. In a medium bowl, gently toss salmon with salt, black pepper, and garlic powder to coat evenly. Let sit while you make the glaze.
  3. In a small bowl, whisk together honey, hot sauce, and apple cider vinegar. Set aside. Add a pinch of chili flakes for extra spice if desired.
  4. Heat olive oil in a large skillet over medium-high heat. Add salmon cubes in a single layer (work in batches if needed). Sear for 2–3 minutes, undisturbed, until golden brown on one side. Flip and cook another 1–2 minutes until cooked through and opaque.
  5. Remove salmon to a plate. Wipe out excess oil from the skillet if needed.
  6. Return skillet to medium-low heat. Add butter and the hot honey glaze. Let bubble for 30 seconds, stirring, until slightly thickened.
  7. Add salmon cubes back in and gently toss to coat. Spoon glaze over each piece so they’re glossy and sticky. Cook for 1 minute more, then remove from heat.
  8. Squeeze fresh lemon juice over the salmon bites. Sprinkle with sesame seeds and chives or green onions if desired.
  9. Serve warm on a platter with toothpicks for easy snacking.

Notes

For best results, pat the salmon dry before cooking and don’t crowd the pan. Adjust hot sauce to taste for more or less heat. For dairy-free, omit butter or use a plant-based substitute. Make ahead by prepping salmon and glaze, then sear and glaze just before serving. Garnishes are optional but add crunch and color.
