  • 1 cup semisweet chocolate chips
  • 1 1/2 cups pecans, roughly chopped
  • 1/2 cup light corn syrup
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: whole pecans for topping
  • Optional: 1-2 tablespoons bourbon
  • Optional: sprinkle of sea salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Place your pie crust into a 9-inch pie dish, crimping the edges as desired. Set aside.
  2. In a large mixing bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until completely smooth.
  3. Spread the chocolate chips evenly over the bottom of the pie crust. Sprinkle the chopped pecans on top.
  4. Pour the filling mixture over the chocolate chips and pecans, ensuring everything is evenly covered.
  5. Arrange whole pecans on top in a decorative pattern if desired.
  6. Place the pie dish on a baking sheet and bake for 50-60 minutes, or until the filling is set but slightly jiggly in the center. (It will firm up as it cools.)
  7. Let the pie cool completely on a wire rack before slicing. This allows the filling to set fully.

Notes

For extra flavor, toast the pecans in the oven for 5-7 minutes before adding them to the pie. If the edges of your crust start to brown too quickly, cover them with foil or a pie crust shield halfway through baking.
