  • 1 cup Persian or English cucumbers, sliced into thin rounds or half-moons
  • 1 cup fresh mozzarella balls (ciliegine) or torn mozzarella
  • 1/4 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Wash and dry the tomatoes, cucumbers, and basil.
  2. Slice the tomatoes into halves or quarters, depending on their size. Cut the cucumbers into thin rounds or half-moons. Tear or slice the mozzarella into bite-sized pieces.
  3. In a large mixing bowl, gently toss the tomatoes, cucumbers, mozzarella, and basil leaves.
  4. Drizzle with olive oil and balsamic glaze. Sprinkle with salt and freshly cracked black pepper to taste.
  5. Use salad tongs to gently toss everything together. Serve immediately for the freshest flavor.
