  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Trim the pork tenderloin by removing any excess fat and silver skin using a sharp knife.
  2. Pat the pork dry thoroughly with paper towels.
  3. In a small bowl, combine garlic powder, crushed dried rosemary, dried thyme, salt, black pepper, onion powder, and optional smoked paprika. Mix well.
  4. Drizzle olive oil over the pork and rub evenly across all sides.
  5. Sprinkle the herb rub over the tenderloin, pressing gently to adhere.
  6. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  7. Place the tenderloin in the air fryer basket in a single layer and cook for 20 minutes, flipping halfway through at 10 minutes.
  8. Check the internal temperature with an instant-read thermometer; target 145°F (63°C) for medium-rare or up to 160°F (71°C) for well done. Cook additional 2-3 minute increments if needed.
  9. Remove the tenderloin and tent loosely with foil. Let rest for 5-10 minutes.
  10. Slice the pork into ½-inch thick medallions against the grain and serve immediately.

Notes

Use fresh herbs (about 1 tablespoon each) instead of dried for a fresher flavor. If the outside browns too fast, lower air fryer temperature to 375°F and cook longer. Always rest the meat after cooking to retain juices. Avoid overcrowding the air fryer basket for even cooking.
