  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • ½ cup apple cider reduction (made by simmering 2 cups of apple cider until thickened)
  • 2 medium apples, peeled and thinly sliced
  • 1 tablespoon unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Optional: drizzle of caramel sauce

Instructions

  1. Preheat your oven to 325°F (163°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
  2. In a small saucepan, simmer 2 cups of apple cider over medium heat until it reduces to about ½ cup. This takes approximately 20-25 minutes. Let cool completely.
  3. In a large mixing bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Mix in sour cream, vanilla extract, and the cooled apple cider reduction.
  4. Pour the filling over the cooled crust. Smooth the top with a spatula. Wrap the outside of the springform pan in aluminum foil and place it in a water bath (a roasting pan filled with about 1 inch of hot water).
  5. Bake the cheesecake at 325°F (163°C) for 60-70 minutes, or until the edges are set but the center still jiggles slightly. Turn off the oven and let the cheesecake cool inside for 1 hour with the door cracked open.
  6. Remove the cheesecake from the oven and water bath. Refrigerate for at least 4 hours or overnight for best results.
  7. In a skillet, melt butter over medium heat. Add sliced apples, brown sugar, cinnamon, and nutmeg. Cook until the apples are tender but not mushy, about 5-7 minutes. Let cool.
  8. Top the cheesecake with the cooked apples and optional caramel drizzle. Slice and enjoy!
