  • 2½ cups (310g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (120g) sour cream
  • Powdered sugar (for coating)
  • Ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your bundt pan thoroughly with butter or non-stick spray.
  2. Pour 2 cups of apple cider into a saucepan and simmer over medium heat until it reduces to about ¾ cup, approximately 20 minutes. Let it cool.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. In another bowl, beat the butter with granulated sugar and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by vanilla extract and the cooled apple cider reduction.
  6. Slowly mix the dry ingredients into the wet mixture, alternating with sour cream. Start and end with the dry mix.
  7. Pour the batter into the prepared bundt pan, smoothing the top with a spatula.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then turn it out onto a cooling rack.
  10. Brush the cake with melted butter and sprinkle generously with a mix of powdered sugar and cinnamon.
