  • 1 cup brown sugar, packed
  • 2 large eggs, room temperature
  • ½ cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp ground cinnamon
  • ¼ cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Pour 1 cup of apple cider into a medium saucepan and simmer over medium heat until reduced to ½ cup. Let it cool completely before using.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in the cooled apple cider reduction, buttermilk, and vanilla extract. Gradually add the dry ingredients, mixing until just combined.
  4. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Use a cookie scoop or tablespoon to drop rounded spoonfuls of batter onto the prepared sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the tops spring back when lightly touched. Cool completely on wire racks.
  5. In a large bowl, beat the butter until creamy. Gradually add powdered sugar, cinnamon, and a pinch of salt, mixing until smooth. Add heavy cream and vanilla extract, and beat until fluffy.
  6. Spread or pipe a generous dollop of cinnamon filling onto the flat side of half the cakes. Top with the remaining cakes, pressing gently to sandwich them together.
