  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/2 cup milk
  • 2 tsp vanilla extract
  • 2 medium apples, peeled and thinly sliced
  • 1/2 cup brown sugar
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray. Line with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, whisk the eggs, melted butter, milk, vanilla extract, and granulated sugar until smooth.
  4. In a small bowl, mix the brown sugar, cinnamon, and nutmeg.
  5. Peel and thinly slice the apples. Set aside.
  6. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.
  7. Pour half the batter into the loaf pan. Arrange half the apple slices on top and sprinkle with half the cinnamon-sugar mixture. Repeat with the remaining batter, apples, and cinnamon-sugar.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
