  • 12 slices thin-cut bacon

  • Salt and black pepper to taste
  • 1/4 cup (30 g) crumbled cooked bacon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set a wire rack on top if available.
  2. Wearing gloves, slice each jalapeño in half lengthwise and scoop out all seeds and membranes.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth. Stir in crumbled cooked bacon if using.
  4. Fill each jalapeño half generously with the cream cheese mixture using a spoon or small cookie scoop.
  5. Wrap each stuffed jalapeño half with one slice of bacon, securing the ends underneath. Slice bacon in half lengthwise if thick-cut.
  6. Place each bacon-wrapped popper seam-side down on the wire rack.
  7. Bake for 20 to 25 minutes, checking around 15 minutes for crispy bacon and bubbly cheese. Optionally broil for 1-2 minutes for extra crispiness, watching closely to avoid burning.
  8. Let the poppers cool for 5 minutes before serving to allow the cheese to set.
