Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the beef tenderloin dry with paper towels. Trim any excess fat or silver skin. Let the meat sit at room temperature for 30 minutes.
  3. In a small bowl, mix olive oil, minced garlic, chopped rosemary, smoked paprika, salt, and pepper. Rub this mixture all over the tenderloin.
  4. Heat an oven-safe skillet over medium-high heat until hot but not smoking. Sear the tenderloin for 2-3 minutes on each side until golden crust forms.
  5. Transfer the skillet with the tenderloin into the preheated oven. Roast for 20-25 minutes for medium-rare (internal temperature around 130°F or 54°C).
  6. Remove the tenderloin from the oven and transfer to a cutting board. Tent loosely with foil and let rest for 10-15 minutes.
  7. While the beef rests, combine prepared horseradish, sour cream, Dijon mustard, lemon juice, salt, and pepper in a bowl. Whisk until smooth and adjust seasoning to taste.
  8. Slice the beef tenderloin into 1/2-inch thick pieces. Serve with a generous dollop of creamy horseradish sauce on the side or drizzled on top.
