Ingredients

Scale
  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground cloves
  • 1 cup (240g) pumpkin puree
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar
  • 2 large eggs
  • ½ cup (120ml) vegetable oil
  • 1 tsp vanilla extract
  • ½ cup milk
  • ⅓ cup (70g) brown sugar (for cinnamon swirl)
  • 1 tsp ground cinnamon (for cinnamon swirl)
  • ¾ cup (90g) powdered sugar (for maple glaze)
  • 2 tbsp pure maple syrup (for maple glaze)
  • 12 tbsp milk (for maple glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large mixing bowl, whisk pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Avoid overmixing.
  5. In a small bowl, mix brown sugar and ground cinnamon for the cinnamon swirl.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Add the remaining batter and use a butter knife to create swirls by gently dragging it through the batter.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a small bowl, whisk powdered sugar, maple syrup, and milk until smooth to make the glaze.
  9. Once the bread is completely cool, drizzle the maple glaze generously over the top. Let it set for 10 minutes before slicing.

Notes

[‘Don’t overmix the batter to ensure a fluffy texture.’, ‘Use room temperature ingredients for better incorporation.’, ‘Start checking the bread at the 50-minute mark to avoid overbaking.’, ‘Allow the bread to cool completely before adding the glaze.’, ‘Adjust the amount of cinnamon-sugar mixture in the swirl to suit your taste.’]
