  • 2 ½ cups (315g) all-purpose flour
  • 1 cup (226g) unsalted butter, chilled and cubed
  • 1 tbsp sugar
  • ½ tsp salt
  • ½ cup (120ml) ice water
  • 2 cups (300g) fresh or frozen blueberries
  • ⅓ cup (70g) granulated sugar
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp cinnamon
  • 1 egg, beaten
  • Colored sugar or sprinkles

Instructions

  1. In a large bowl, whisk together the flour, sugar, and salt. Add the cubed butter and mix until the butter is pea-sized. Slowly add the ice water, one tablespoon at a time, and mix just until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
  2. Combine blueberries, sugar, cornstarch, lemon juice, and cinnamon in a saucepan over medium heat. Cook until the mixture thickens and the blueberries soften, about 8-10 minutes. Remove from heat and let cool.
  3. Preheat your oven to 375°F (190°C). On a floured surface, roll out one disc of dough to about ⅛-inch thickness. Use cookie cutters to cut out shapes. Repeat with the second disc of dough.
  4. Place half of the dough shapes on a parchment-lined baking sheet. Spoon a small amount of blueberry filling onto the center of each shape, leaving a border around the edges. Place the remaining dough shapes on top and press the edges together with a fork to seal.
  5. Brush the tops of the pies with the beaten egg and sprinkle with colored sugar or sprinkles for a festive touch.
  6. Bake for 20-25 minutes, or until the crust is golden brown and flaky. Let cool before serving.
