  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 6 oz (170g) semi-sweet chocolate, chopped
  • 1/2 cup (120ml) heavy cream
  • 1 tbsp unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a large bowl, cream the butter and sugar together until fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract. Gradually add the flour, baking powder, and salt, alternating with milk, until the batter is smooth.
  3. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool completely on a wire rack.
  4. In a medium saucepan, heat milk over medium heat until steaming (but not boiling). In a separate bowl, whisk together sugar, cornstarch, and egg yolks. Gradually pour the hot milk into the egg mixture, whisking constantly. Return to the saucepan and cook over medium heat, stirring, until thickened (about 5-7 minutes). Stir in vanilla extract. Cool completely.
  5. In a double boiler, melt the chocolate with heavy cream and butter, stirring until smooth. Cool slightly before using.
  6. Place one cake layer on a serving plate. Spread the custard evenly over the top. Place the second cake layer on top. Pour the chocolate glaze over the cake, letting it drip down the sides for a dramatic effect.
  7. Let the assembled cake chill for about an hour before serving to allow the layers to set beautifully.
