Sweet, spiced, gooey blondies with chunks of tart apple and caramel swirls, perfect for fall gatherings or cozy nights in.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup fresh apples, peeled and diced (use a tart variety like Granny Smith)
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking dish with parchment paper.
  2. In a large bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and creamy. This should take about 2-3 minutes.
  3. In a separate bowl, sift together flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, using a spatula to fold them together. Be careful not to overmix—stop as soon as no streaks of flour remain.
  5. Gently fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
  6. Pour half of the batter into the prepared baking dish. Drizzle half of the caramel sauce over the batter, then top with the remaining batter. Swirl the remaining caramel sauce on top using a knife or skewer.
  7. Place the dish in the oven and bake for 35-40 minutes, or until a toothpick inserted comes out with just a few moist crumbs.
  8. Let the blondies cool completely in the pan before slicing. This helps them set and makes cutting easier.

Notes

[‘Don’t overmix the batter to keep the blondies chewy.’, ‘Granny Smith apples work best for their tart flavor.’, ‘Swirl the caramel into the batter for gooey pockets of sweetness.’, ‘Let the blondies cool completely before slicing for easier cutting.’]
