  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) brown sugar, packed
  • 1/2 cup (120ml) vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups (150g) shredded carrots
  • 1/2 cup (60g) chopped walnuts (optional)
  • 4 oz (113g) cream cheese, softened
  • 2 tbsp (30g) unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
  3. In another bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until smooth.
  4. Add the shredded carrots to the wet mixture and stir until evenly distributed.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Don’t overmix.
  6. Fold in the chopped walnuts, if using.
  7. Pour the batter into the prepared pan. Smooth the top with a spatula and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely before frosting.
  9. Beat the cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract, mixing until fluffy and spreadable.
  10. Spread the frosting evenly over the cooled bars. Slice into squares and enjoy!
