Ingredients

Scale
  • 1 package cheese tortellini (fresh or frozen)
  • 1 lb thinly sliced flank steak or sirloin
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups shredded provolone or mozzarella cheese
  • 1 cup heavy cream
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the tortellini according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add the sliced steak and cook for 2-3 minutes per side, until browned. Remove steak and set aside.
  4. In the same skillet, add more olive oil if needed. Sauté the onions, bell peppers, and garlic until softened, about 5 minutes.
  5. Deglaze the skillet with beef broth, scraping up any browned bits for added flavor.
  6. Reduce heat to medium and stir in heavy cream and Worcestershire sauce. Simmer for 2-3 minutes to thicken slightly.
  7. Mix the cooked tortellini into the skillet, ensuring it’s evenly coated with the sauce.
  8. Layer half of the tortellini mixture into a casserole dish. Add a layer of steak slices and sprinkle with shredded cheese. Repeat with the remaining tortellini, steak, and cheese.
  9. Bake in the preheated oven for 20 minutes, or until bubbly and golden brown on top.
  10. Let the casserole rest for 5 minutes before serving. Enjoy!

Notes

[‘Use fresh tortellini for faster cooking, but frozen works well too—just adjust the boiling time.’, ‘Thinly slice the steak against the grain to keep it tender.’, ‘Don’t skip deglazing the skillet! It adds so much flavor to the sauce.’, ‘If the sauce seems too thick, add a splash of milk or broth to loosen it up.’, ‘To save time, you can prep the veggies and steak ahead of time and store them in the fridge until ready to cook.’]
