Cheesy Beef and Rice Casserole

A comforting and easy-to-make casserole combining ground beef, rice, and melted cheddar cheese for a hearty family meal.

  • 1 pound (450 g) ground beef (80/20 preferred)
  • 1 cup (190 g) uncooked white or brown rice
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups (480 ml) beef broth
  • 1 can (14.5 oz / 410 g) diced tomatoes
  • 2 cups (200 g) shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3-4 minutes until translucent.
  3. Add minced garlic and sauté for 30 seconds.
  4. Add ground beef, breaking it apart with a spoon. Cook for 6-8 minutes until fully browned. Drain excess fat if necessary.
  5. Stir in Italian seasoning, salt, and pepper to taste.
  6. Pour in beef broth and diced tomatoes with their juice. Bring to a gentle simmer.
  7. Add uncooked rice to the skillet and stir until evenly distributed. Let simmer for about 2 minutes.
  8. Transfer the mixture to a 9×13-inch casserole dish and spread evenly. Cover tightly with aluminum foil.
  9. Bake for 35 minutes.
  10. Remove foil and sprinkle shredded cheddar cheese evenly over the top.
  11. Return to oven uncovered and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  12. Remove from oven and let rest for 5 minutes before serving.

Notes

If rice is not fully tender after baking, cover and bake for an additional 5-10 minutes. Brown rice requires 10-15 minutes longer baking time. Let casserole rest after baking for better texture. Drain excess fat after browning beef to avoid sogginess. Use tight-fitting foil to trap steam.
