This Chicken Bellagio recipe combines crispy pan-fried chicken, creamy basil pesto pasta, and prosciutto for a decadent yet approachable dish inspired by the Cheesecake Factory.

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (use Panko for extra crispiness)

  • 12 oz spaghetti or linguine
  • 1/2 cup basil pesto
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 4 slices of prosciutto
  • 1 cup fresh arugula
  • 1 tbsp olive oil (for drizzling)
  • Freshly grated Parmesan (optional, for garnish)

Instructions

  1. Pound the chicken breasts to an even thickness (about 1/2 inch).
  2. Set up a breading station with seasoned flour, beaten eggs, and breadcrumbs mixed with Parmesan.
  3. Coat each chicken breast in flour, dip into eggs, and press into the breadcrumb mixture until fully coated.
  4. Heat olive oil in a large skillet over medium heat. Add breaded chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Set aside on a paper towel-lined plate.
  5. Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  6. In the same skillet, lower the heat and add pesto, heavy cream, and Parmesan cheese. Stir until smooth and creamy.
  7. Add cooked pasta to the sauce and toss to coat. Add reserved pasta water a tablespoon at a time if the sauce is too thick.
  8. Plate the pasta, top with crispy chicken, and layer slices of prosciutto on top.
  9. Add fresh arugula and drizzle with olive oil. Garnish with extra Parmesan if desired.
