  • 1 scoop vanilla protein powder (whey or plant-based works equally well)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs, room temperature
  • 1/2 cup plain Greek yogurt
  • 1/4 cup unsweetened almond milk
  • 2 tbsp honey or maple syrup
  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon
  • 1 tbsp melted butter or coconut oil
  • 2 tbsp powdered sugar
  • 1 tsp almond milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line your muffin tin with paper liners or grease with non-stick spray.
  2. In a large bowl, whisk together oat flour, protein powder, baking powder, baking soda, cinnamon, and salt until well combined.
  3. In a separate bowl, whisk together eggs, Greek yogurt, almond milk, and honey/maple syrup.
  4. Gradually add the wet mixture into the dry ingredients. Stir until just combined—don’t overmix.
  5. In a small bowl, mix coconut sugar, cinnamon, and melted butter until it forms a paste-like consistency.
  6. Spoon a small layer of batter into each muffin cup, add a dollop of the cinnamon swirl mixture, then top with more batter until cups are about 3/4 full.
  7. Use a toothpick or skewer to gently swirl the cinnamon mixture into the batter.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow muffins to cool completely before drizzling with the optional glaze. To make the glaze, whisk together powdered sugar, almond milk, and vanilla extract until smooth.
