  • 1/2 teaspoon almond extract (optional)
  • 1 cup (140g) chopped dried cherries

Instructions

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a mixing bowl, beat the softened butter and 3/4 cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Stir in vanilla extract and almond extract (if using).
  4. In a separate bowl, whisk together flour and salt. Gradually add to the butter mixture on low speed, mixing just until combined.
  5. Gently fold in chopped dried cherries, ensuring even distribution without smashing them.
  6. Turn dough onto a lightly floured surface and shape into a log about 2 inches in diameter. Wrap tightly in plastic wrap and chill for at least 30 minutes.
  7. Unwrap chilled dough and slice into 1/4-inch thick rounds. Place slices about 1 inch apart on prepared baking sheet.
  8. Sprinkle a little granulated sugar on top of each cookie.
  9. Bake for 18-22 minutes or until edges are lightly golden brown.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes
