Cozy Apple Chicken Chili

  • 2 boneless, skinless chicken breasts
  • 2 sweet apples (Honeycrisp or Gala), peeled and diced
  • 1 yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 can (15 oz) white beans, rinsed and drained
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional toppings: shredded cheese, sour cream, diced avocado, fresh cilantro, crushed tortilla chips

Instructions

  1. Peel and dice the apples into small cubes. Finely chop the onion and mince the garlic. Rinse and drain the white beans.
  2. Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Season the chicken breasts with salt and pepper, then cook for about 5-7 minutes per side until golden brown. Remove from the pot and set aside.
  3. Add another tablespoon of olive oil to the pot. Sauté the onions and garlic until softened and fragrant, about 3-4 minutes.
  4. Stir in the diced apples and cook for another 2 minutes, letting them soften slightly.
  5. Sprinkle in the chili powder, cumin, and smoked paprika. Stir well to coat the aromatics and apples in the spices.
  6. Pour in the chicken broth, diced tomatoes, and tomato paste. Bring to a gentle simmer.
  7. Shred the cooked chicken using two forks.
  8. Stir the shredded chicken and white beans into the pot. Let everything simmer together for 20 minutes, stirring occasionally.
  9. Taste and adjust the seasoning with additional salt and pepper as needed.
  10. Ladle the chili into bowls and top with your favorite garnishes like shredded cheese or a dollop of sour cream.

Notes

Use sweet apple varieties like Honeycrisp or Fuji for the best flavor. Allow the chili to simmer for optimal flavor melding. Add cayenne or red pepper flakes for extra heat.
