This Cozy Apple Cinnamon German Pancake combines caramelized apples with a fluffy German pancake, baked to perfection in a single skillet. Perfect for fall mornings or brunch gatherings.

  • 3 large eggs, room temperature
  • 2/3 cup (80g) all-purpose flour
  • 2/3 cup (160ml) whole milk, room temperature
  • 2 tbsp granulated sugar
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp salt
  • 2 medium apples, peeled, cored, and thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg (optional)
  • Pinch of salt
  • Powdered sugar (optional)
  • Maple syrup (optional)
  • Whipped cream (optional)
  • Chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and place your skillet in the oven while it preheats.
  2. Heat the butter in a skillet over medium heat. Add the sliced apples, brown sugar, cinnamon, nutmeg (if using), and a pinch of salt. Stir and cook for about 5–7 minutes until the apples are softened and lightly caramelized. Remove from heat and set aside.
  3. In a large mixing bowl, whisk the eggs until frothy. Gradually add the flour, milk, sugar, vanilla, and salt, whisking until smooth. The batter should be thin.
  4. Carefully remove the preheated skillet from the oven. Add the apple mixture to the skillet, spreading it evenly. Pour the batter over the apples, then return the skillet to the oven.
  5. Bake for 18–22 minutes, or until the pancake is puffed and golden brown around the edges. Don’t open the oven door while baking.
  6. Once baked, remove the skillet from the oven and let it cool for 2–3 minutes. Dust with powdered sugar, drizzle with maple syrup, or add your favorite toppings before slicing and serving.
