A tender cake with cinnamon-spiced fresh apples and a sweet cinnamon-sugar topping that mimics classic apple fritters. Perfect for a cozy dessert or brunch.

  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) milk, whole or 2%
  • 2 medium fresh apples (about 2 cups diced), peeled and diced
  • ½ cup (100g) brown sugar
  • 1 teaspoon ground cinnamon (for topping)
  • 3 tablespoons (43g) butter, melted (for topping)
  • Optional glaze: powdered sugar and a splash of milk or fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. Peel, core, and dice 2 medium apples into small ½ inch pieces. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, beat the softened butter and granulated sugar until fluffy and pale, about 3–5 minutes.
  5. Beat in the eggs one at a time, then mix in the vanilla extract.
  6. Gradually add the flour mixture and milk alternately to the butter mixture, starting and ending with the flour. Mix gently until just combined.
  7. Fold in the diced apples gently with a spatula.
  8. In a small bowl, combine brown sugar, cinnamon, and melted butter for the topping. Stir until crumbly.
  9. Pour the batter into the prepared pan and smooth the top. Sprinkle the cinnamon-sugar topping evenly over the batter.
  10. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  11. Let the cake cool in the pan on a wire rack for 15 minutes before slicing.
  12. Optional: Drizzle a glaze made from powdered sugar and a splash of milk or lemon juice over the cooled cake.

Notes

Use room temperature ingredients for better texture. Do not overmix the batter to avoid toughness. Choose firm apples like Honeycrisp or Fuji to maintain texture. Tent with foil if topping browns too quickly. Optional glaze adds extra sweetness.
