  • 1 ½ cups (190 grams) all-purpose flour
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (50 grams) packed brown sugar
  • 1 teaspoon baking soda

  • ½ teaspoon ground cinnamon (optional)
  • 2 large eggs, room temperature
  • ½ cup (113 grams) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 cup (170 grams) semi-sweet or milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin tin or line with paper liners to prevent sticking.
  2. In a medium bowl, mash 3 ripe bananas with a fork or potato masher until mostly smooth; a few small lumps are fine.
  3. Add 2 large eggs, ½ cup melted unsalted butter, and 1 teaspoon vanilla extract to the mashed bananas. Whisk until combined and smooth.
  4. In a large bowl, whisk together 1 ½ cups all-purpose flour, ¾ cup granulated sugar, ¼ cup packed brown sugar, 1 teaspoon baking soda, ½ teaspoon salt, and ½ teaspoon ground cinnamon.
  5. Pour the wet banana mixture into the dry ingredients bowl. Gently fold with a wooden spoon or spatula until just combined. Avoid overmixing.
  6. Gently stir in 1 cup of chocolate chips. Reserve a few to sprinkle on top if desired.
  7. Spoon batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle reserved chocolate chips on top.
  8. Bake for 18-22 minutes. Check at 18 minutes by inserting a toothpick into the center; if it comes out with a few moist crumbs, they’re done.
