Ingredients

Scale
  • 6 cups apples, peeled and sliced (about 6 medium apples; Granny Smith or Honeycrisp)
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons cornstarch
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, melted
  • Vanilla ice cream (for serving)
  • Caramel sauce (homemade or store-bought, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, vanilla extract, and cornstarch until well coated.
  3. Transfer the apple mixture into the prepared baking dish and spread evenly.
  4. In a medium bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Pour melted butter over the dry ingredients and mix until crumbly and oats are evenly coated.
  5. Sprinkle the topping evenly over the apple layer without pressing down.
  6. Bake for 40 to 45 minutes until the topping is golden brown and apples are bubbling. If topping browns too fast, cover loosely with foil halfway through baking.
  7. While baking, prepare the caramel drizzle (optional): melt 1/2 cup sugar in a small saucepan over medium heat until deep amber, then carefully add 1/4 cup heavy cream, stirring until smooth. Remove from heat and stir in 2 tablespoons unsalted butter and a pinch of salt. Let cool slightly.
  8. Let the apple crisp rest for 10 minutes after baking to set the filling.
  9. Serve warm topped with vanilla ice cream and a drizzle of caramel sauce.

Notes

Use Granny Smith and Honeycrisp apples for best flavor balance. If topping is too dry, add a tablespoon more melted butter; avoid overmixing the topping to keep it crumbly. Place dish in lower third of oven for even cooking. Broil for 1-2 minutes at the end for extra caramelization if desired. Rest crisp after baking to thicken juices. Can prepare ahead and refrigerate unbaked, adding 5-10 minutes to baking time if baking cold. Frozen apples can be used if thawed and drained.
