Ingredients

  • 2 pounds Yukon Gold or Russet potatoes, peeled and quartered
  • 4 cups fresh kale, stems removed and roughly chopped
  • 4 tablespoons unsalted Irish butter, softened
  • ½ cup whole milk, warmed
  • 3 stalks green onions, thinly sliced
  • Salt to taste
  • Freshly ground black pepper to taste
  • Optional: A pinch of freshly grated nutmeg

Instructions

  1. Place the peeled and quartered potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
  2. While potatoes cook, heat 1 tablespoon of butter in a skillet over medium heat. Add the sliced green onions and sauté for 2 minutes until fragrant. Toss in the chopped kale, season lightly with salt, and cook, stirring occasionally, until the kale is tender and bright green—about 5-7 minutes. Drain any excess moisture, then set aside.
  3. Drain the potatoes well in a colander. Return them to the pot or a large bowl. Add the remaining butter and warmed milk. Mash with a potato masher or potato ricer until smooth and creamy. Add more milk if needed to reach desired consistency.
  4. Fold the sautéed kale and green onions into the mashed potatoes gently but thoroughly. Season with salt, freshly ground black pepper, and, if using, a pinch of nutmeg. Taste and adjust seasoning as needed.
  5. Spoon the Colcannon into a serving bowl. Add a pat of butter on top if desired. Serve warm.

Notes

Do not overcook kale to avoid bitterness and loss of vibrant color. Warm the milk before adding to potatoes for creamier texture. Use a potato ricer for smoother mashed potatoes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently with added milk or broth to maintain creaminess.
