Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Peel, seed, and cube the butternut squash into roughly 1-inch pieces. Toss with olive oil, salt, and pepper, then spread evenly on the baking sheet.
  3. Roast the squash for about 25-30 minutes, turning halfway through, until the squash is tender and lightly caramelized.
