A hearty and flavorful beef stew made with tender beef, wholesome vegetables, and herbs, slow-cooked to perfection in a crock pot. Perfect for chilly winter evenings.

  • 1 beef chuck roast, cut into 1-inch cubes
  • 2 cups Yukon gold or red potatoes, diced
  • 2 cups carrots, peeled and sliced thick
  • 1 cup celery, sliced thin
  • 1 cup onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon thyme (fresh or dried)
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil

Instructions

  1. Season beef cubes generously with salt and pepper.
  2. Heat a large skillet over medium-high heat and add olive oil. Sear beef cubes in batches until browned on all sides.
  3. Transfer browned beef to the crock pot.
  4. Add diced potatoes, carrots, celery, onion, and minced garlic to the crock pot.
  5. In a small bowl, whisk together beef broth, tomato paste, Worcestershire sauce, and flour until smooth. Pour over meat and vegetables.
  6. Add bay leaves and thyme on top, and gently stir.
  7. Cover and cook on low for 8 hours or high for 4-5 hours, until beef is tender and vegetables are cooked through.
  8. Remove bay leaves and stir the stew. Adjust seasoning with salt and pepper as needed.
  9. Serve warm with crusty bread or over mashed potatoes.
