  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 28 oz crushed tomatoes (canned)
  • 15 oz tomato sauce (canned)
  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 15 oz whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • A handful fresh basil leaves, chopped
  • 4 cups beef broth
  • 68 lasagna noodles, broken into bite-size pieces (no-boil preferred)

Instructions

  1. Brown the ground beef in a large skillet over medium heat until no longer pink, breaking it up with a spoon. Drain excess fat if needed.
  2. Add diced onion and minced garlic to the skillet and cook until softened and fragrant, about 3-4 minutes.
  3. Transfer the cooked beef mixture to the slow cooker.
  4. Add crushed tomatoes, tomato sauce, Italian seasoning, red pepper flakes (if using), salt, pepper, and beef broth to the slow cooker. Stir gently to combine.
  5. In a medium bowl, mix ricotta, shredded mozzarella, grated Parmesan, and chopped basil until well combined and creamy.
  6. Place broken lasagna noodles on top of the soup mixture in the slow cooker without stirring.
  7. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, checking noodles early to avoid overcooking.
  8. About 30 minutes before serving, dollop spoonfuls of the cheese mixture over the soup and gently swirl with a spoon or spatula.
  9. Taste and adjust seasoning with salt and pepper as needed.
  10. Ladle soup into bowls and garnish with extra shredded mozzarella or fresh basil if desired. Serve hot.
