A warm, comforting French toast casserole featuring custard-soaked brioche bread topped with a crunchy cinnamon streusel, perfect for cozy weekends or brunch gatherings.

Ingredients

Scale
  • 8 cups cubed day-old brioche or challah bread
  • 8 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground cinnamon
  • ½ cup unsalted butter, melted
  • ½ cup packed brown sugar
  • ½ cup all-purpose flour
  • A pinch of salt

Instructions

  1. Cube the brioche into roughly 1-inch pieces and place evenly in a greased 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until smooth.
  3. Pour the custard mixture over the bread cubes and press gently to submerge. Let sit at room temperature for at least 30 minutes or refrigerate overnight.
  4. In a medium bowl, mix brown sugar, all-purpose flour, melted butter, and ground cinnamon until crumbly to make the streusel topping.
  5. Preheat oven to 350°F (175°C).
  6. Sprinkle the streusel topping evenly over the soaked bread.
  7. Bake uncovered for 45 to 55 minutes until the top is golden brown and a knife inserted in the center comes out clean.
  8. Let the casserole cool for 10 minutes before serving.

Notes

For best results, soak the bread overnight for a creamier texture. If the streusel browns too quickly, tent with foil halfway through baking. Use day-old bread to prevent sogginess. Fresh bread can be toasted lightly before soaking. Add a splash of maple syrup or almond extract for extra flavor. Gluten-free and vegan adaptations are possible with substitutions.
