  • 2 pounds beef chuck roast, cut into -inch cubes
  • 12 oz Guinness stout beer
  • 3 medium carrots, peeled and cut into chunks
  • 2 medium parsnips, peeled and chunked
  • 2 medium russet potatoes, peeled and cubed
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth (low sodium preferred)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • ¼ cup all-purpose flour (30 grams)
  • 2 tablespoons olive oil or vegetable oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat 2 pounds of beef chuck roast dry with paper towels. Season generously with salt and pepper. Toss the beef cubes with ¼ cup of all-purpose flour until evenly coated.
  2. Heat 2 tablespoons of olive oil in a Dutch oven over medium-high heat. Brown beef cubes in batches without overcrowding, about 3-4 minutes per batch. Remove browned beef to a plate and set aside.
  3. Lower heat to medium. Add diced onion to the pot and cook until softened and translucent, about 5 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
  4. Stir in 2 tablespoons of tomato paste and cook for 2 minutes. Pour in 12 oz Guinness stout beer to deglaze, scraping up browned bits from the pot’s bottom.
  5. Return browned beef to the pot. Pour in 2 cups beef broth. Stir in Worcestershire sauce, fresh thyme sprigs, and bay leaves. Bring to a gentle simmer.
  6. Cover pot partially and reduce heat to low. Simmer gently for 1.5 to 2 hours until beef is fork-tender and sauce thickens.
  7. Peel and cut carrots, parsnips, and potatoes into chunks. Add them to the stew and simmer uncovered for another 30-40 minutes until vegetables are tender but not mushy.
  8. Remove thyme sprigs and bay leaves. Taste and adjust salt and pepper as needed. For thicker stew, simmer uncovered longer or mash a few potato chunks into the sauce.
  9. If stew is too thin, mix 1 tablespoon flour with cold water to make a slurry, stir into stew, and simmer a few more minutes to thicken.

Notes

Brown beef in batches to develop flavor and avoid overcrowding. Remove thyme and bay leaves before serving to prevent overpowering taste. Simmer gently to keep beef tender. Adjust thickness with flour slurry if needed. Can be adapted for slow cooker or gluten-free diets.
