  • 1 lb smoked kielbasa, sliced into rounds
  • 2 medium potatoes, peeled and diced
  • 2 medium carrots, sliced thinly
  • 2 celery stalks, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp smoked paprika (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Slice the kielbasa into rounds, dice the potatoes, and chop the carrots, celery, and onion.
  2. Heat olive oil and butter in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, stirring frequently, about 5-7 minutes.
  3. Stir in the sliced kielbasa and cook for another 3-4 minutes to let it brown slightly and release its smoky flavor.
  4. Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat to a simmer.
  5. Add salt, pepper, and smoked paprika (if using). Cover and let it simmer for 20-25 minutes, or until the potatoes are tender.
  6. Reduce the heat to low and stir in the heavy cream. Let it heat through for 5 minutes, but don’t let it boil.
  7. Ladle the soup into bowls and sprinkle with fresh parsley for garnish.
