A simple, customizable baked potato bar featuring fluffy russet potatoes and a variety of fresh, flavorful toppings perfect for casual gatherings and busy evenings.

Ingredients

Scale
  • 4 large russet potatoes, scrubbed and dried
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1½ cups shredded sharp cheddar cheese
  • ½ cup crispy bacon bits
  • 1 cup sour cream (full-fat recommended, can substitute Greek yogurt)
  • 4 green onions, thinly sliced
  • 1 cup fresh pico de gallo (chopped tomatoes, onions, cilantro, lime juice, salt)
  • 2 tablespoons fresh chopped cilantro (optional)
  • 1 medium avocado, sliced
  • 4 tablespoons butter (optional)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional extras: jalapeño slices, grated Parmesan or crumbled feta, chopped steamed broccoli, sautéed mushrooms

Instructions

  1. Preheat your oven to 425°F (220°C). Scrub the russet potatoes well and pat them dry with a towel.
  2. Prick each potato several times with a fork to allow steam to escape.
  3. Rub the potatoes with olive oil and sprinkle with sea salt.
  4. Place potatoes directly on the oven rack or on a baking sheet lined with foil.
  5. Bake for 50-60 minutes until skin is crispy and a fork slides easily into the middle.
  6. While the potatoes bake, prep your toppings: chop green onions, mix pico de gallo ingredients, crumble bacon, and slice avocado. Keep everything chilled and ready to go.
  7. Once baked, remove potatoes from the oven and let them cool slightly.
  8. Slice each potato lengthwise down the middle without cutting all the way through. Gently squeeze the ends to fluff the interior.
  9. Add butter (optional) and season the potato flesh with salt, pepper, and smoked paprika.
  10. Set up your loaded baked potato bar by arranging the potatoes and toppings on the table, letting everyone build their own masterpiece.

Notes

Do not skip pricking the potatoes to avoid bursting. Let potatoes rest a few minutes after baking for easier handling. Avoid wrapping potatoes in foil to keep skin crispy. Prep toppings while potatoes bake to save time. For extra richness, mix cream cheese or sour cream into the potato fluff before adding toppings. Leftovers can be stored separately and reheated in the oven for best texture.
