  • 1 package (8 rolls) cinnamon rolls, frozen or refrigerated
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup (50 grams) packed brown sugar
  • Pinch of salt
  • 4 ounces (115 grams) cream cheese, softened
  • 1 cup (120 grams) powdered sugar, sifted
  • 23 tablespoons (30–45 ml) milk or cream

Instructions

  1. If using frozen cinnamon rolls, thaw according to package instructions. Cut each roll into quarters and spread evenly in a greased 9×13-inch baking dish without packing tightly.
  2. In a medium bowl, whisk together eggs, whole milk, vanilla extract, ground cinnamon, brown sugar, and salt until combined and slightly frothy.
  3. Pour the custard evenly over the cinnamon roll pieces. Press down lightly to help the bread soak up the liquid. Cover tightly with plastic wrap or foil and refrigerate overnight or at least 6 hours.
  4. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45–50 minutes until custard is set and top is golden brown. A knife inserted should come out clean or with a few moist crumbs.
  5. While baking, prepare the cream cheese glaze by beating softened cream cheese and powdered sugar until smooth. Add milk or cream 1 tablespoon at a time until glaze reaches a drizzle consistency.
  6. After baking, let casserole cool about 10 minutes, then drizzle cream cheese glaze generously over the top. Serve warm.

Notes

Use room temperature eggs and milk for better custard texture. Do not skip the overnight soak for best flavor and texture. Grease the baking dish well to prevent sticking. If undercooked after 50 minutes, cover loosely with foil and bake 10 more minutes. Let rest 10 minutes before glazing. Leftovers keep well refrigerated for up to 3 days and reheat gently.
