  • 6 medium fresh peaches, peeled and sliced
  • 1 cup granulated sugar (200g)
  • 1/4 cup brown sugar (50g)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons all-purpose flour (24g) for thickening
  • 6 tablespoons unsalted butter (85g), cold and cubed
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk (180ml)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice about 6 medium peaches. Toss them in a bowl with 1 cup granulated sugar, 1/4 cup brown sugar, 1 teaspoon cinnamon, 1 tablespoon fresh lemon juice, and 3 tablespoons flour. Stir gently until all slices are coated.
  3. Transfer the peach mixture to your 9-inch cast iron skillet or baking dish. Spread it out evenly, including all the juices.
  4. In a mixing bowl, whisk together 1 1/2 cups (190g) all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt.
  5. Cut in 6 tablespoons cold, cubed unsalted butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  6. Stir in 3/4 cup buttermilk and 1 teaspoon vanilla extract until just combined into a soft dough.
  7. Drop large spoonfuls of the biscuit dough over the peaches, covering as much surface as possible but leaving some gaps.
  8. Bake for 35-40 minutes until the biscuit topping is golden brown and the peach filling is bubbly and thick.
  9. Let cool for about 10 minutes before serving.

Notes

Use cold butter for flaky biscuit topping. Tent with foil if topping browns too quickly. Add extra flour if peaches are very juicy. Peeling peaches by blanching in boiling water helps remove skins easily. Let cobbler rest 10 minutes before serving to thicken filling.
