  • 12 ounces mushrooms, sliced (cremini, button, and shiitake)
  • 6 cups vegetable broth (or chicken broth)
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 whole bay leaf
  • 2 tablespoons butter (or olive oil for vegan option)
  • 1 cup heavy cream (or coconut milk for dairy-free version)
  • Salt and pepper to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Rinse the wild rice thoroughly, slice the mushrooms, and chop the vegetables. Mince the garlic and set everything aside.
  2. In a large pot over medium heat, melt the butter or heat the olive oil. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic, thyme, and bay leaf. Cook for 1 minute until fragrant.
  4. Add the sliced mushrooms and cook for 6-8 minutes, stirring occasionally, until they release their liquid and start to brown.
  5. Pour in the vegetable broth and stir in the rinsed wild rice. Bring the mixture to a boil.
  6. Reduce the heat to low, cover the pot, and let the soup simmer for 45-50 minutes, or until the wild rice is tender. Stir occasionally to prevent sticking.
  7. Once the rice is cooked, stir in the heavy cream (or coconut milk). Let it heat through for 5 minutes. Taste and adjust salt and pepper as needed.
