  • 1/4 cup (50g) granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 1/4 cups (150g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (70g) old-fashioned oats
  • 1 cup (90g) quick oats
  • 2/3 cup (100g) dried cranberries
  • 2/3 cup (120g) white chocolate chips or chunks
  • Optional: 1 tablespoon orange zest
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: Dark chocolate chips

Instructions

  1. Line two baking sheets with parchment paper or silicone mats. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat together the butter, brown sugar, and granulated sugar until light and fluffy (about 2 minutes with an electric mixer).
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low until just combined.
  6. Fold in the old-fashioned oats and quick oats using a spatula or wooden spoon.
  7. Gently fold in the dried cranberries and white chocolate chips or chunks.
  8. Chill the dough in the refrigerator for 15-30 minutes (optional but recommended).
  9. Using a cookie scoop or tablespoon, drop rounded balls of dough (about 1 1/2 tablespoons each) onto the prepared baking sheets, spacing them 2 inches apart. Flatten slightly.
  10. Bake for 10-12 minutes, rotating the trays halfway through. Cookies should be golden at the edges and soft in the center.
  11. Let cookies cool on the tray for 3-5 minutes, then transfer to a cooling rack.

Notes

For best results, use room temperature ingredients and chill the dough before baking. Don’t overbake—the cookies should look slightly underdone in the center when you take them out. Customize with nuts, orange zest, or dark chocolate chips. Store in an airtight container for up to 5 days or freeze for up to 2 months.
