  • 1/2 cup Baileys Irish Cream

  • 1/4 cup sour cream
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and 1/4 cup granulated sugar. Mix until evenly moistened and clumpy.
  3. Press the crust mixture firmly and evenly into the bottom of an 8×8-inch (20×20 cm) square baking pan.
  4. Bake the crust for 10 minutes, then remove from oven.
  5. In a large bowl, beat softened cream cheese with 2/3 cup sugar using an electric mixer until smooth and creamy (about 2-3 minutes). Scrape down the sides.
  6. Add eggs one at a time, mixing just until combined after each addition.
  7. Pour in Baileys Irish Cream and vanilla extract, blending gently to combine.
  8. Fold in sour cream and a pinch of salt until fully incorporated and batter is silky and pourable.
  9. Pour the cheesecake filling over the warm crust and smooth the top with a spatula.
  10. Bake for 35-40 minutes until edges are set and center is slightly jiggly.
  11. Cool the bars on a rack for 1 hour, then refrigerate for at least 4 hours or overnight.
  12. Slice with a sharp knife dipped in hot water and wiped dry. Serve chilled or slightly chilled.
