  • 1 tablespoon chia seeds
  • 1/2 cup milk (cow’s milk, almond milk, oat milk, etc.)
  • 1/4 cup Greek yogurt (or dairy-free coconut yogurt)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 12 teaspoons honey or maple syrup
  • 1/4 cup fresh or frozen blueberries
  • Optional toppings: fresh blueberries, shredded coconut, nuts

Instructions

  1. In a mason jar or bowl, combine 1/2 cup rolled oats, 1 tablespoon chia seeds, and 1/2 cup milk.
  2. Stir in 1/4 cup Greek yogurt for a creamy texture.
  3. Add the zest of 1 lemon (about 1 teaspoon) and 1 tablespoon of fresh lemon juice.
  4. Drizzle in 1-2 teaspoons of honey or maple syrup, depending on your sweetness preference.
  5. Stir in 1/4 cup fresh or frozen blueberries.
  6. Optionally, layer the ingredients in your jar for a pretty presentation. Cover the container and refrigerate for at least 4 hours, preferably overnight.
  7. In the morning, stir the oats and top with additional blueberries, shredded coconut, or your favorite nuts.
