  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Place the cubed butternut squash on the baking sheet. Drizzle with one tablespoon of olive oil, and season with a pinch of salt and pepper. Toss to coat evenly, then spread the squash out in a single layer. Roast for 25-30 minutes, or until tender and slightly caramelized.
  3. While the squash is roasting, heat the remaining tablespoon of olive oil in a large soup pot over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes until the onions are golden and caramelized.
  4. Add the minced garlic to the pot and cook for 1-2 minutes, stirring frequently, until fragrant.
  5. Once the squash is roasted, add it to the pot along with the vegetable broth. Stir to combine and bring the mixture to a gentle simmer. Cook for 10 minutes to let the flavors meld.
  6. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  7. Stir in the heavy cream and a pinch of nutmeg. Taste and adjust the seasoning with additional salt and pepper if needed.
  8. Serve hot, garnished with fresh parsley, a drizzle of olive oil, or roasted pumpkin seeds, if desired.
