  • 2 tablespoons cream cheese, softened to room temperature
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 egg, room temperature
  • 2 tablespoons milk
  • 1/4 teaspoon lemon juice (optional)
  • Pinch of salt

Instructions

  1. Lightly grease the inside of a microwave-safe mug with butter or non-stick spray.
  2. In the mug, add 2 tablespoons of softened cream cheese, 1 tablespoon of sugar, and 1/4 teaspoon of vanilla extract. Mix well until smooth.
  3. Stir in 1 tablespoon of all-purpose flour and a pinch of salt. Mix until fully incorporated.
  4. Crack 1 egg into the mixture and add 2 tablespoons of milk. Stir until the batter is smooth and lump-free.
  5. If desired, add 1/4 teaspoon of lemon juice for a tangy cheesecake flavor and mix well.
  6. Microwave the mug on high for 60-90 seconds. Check after 60 seconds; the cake should be set but still slightly jiggly in the center.
  7. Let the mug cake sit for 1-2 minutes to cool slightly before enjoying.
  8. Top with whipped cream, berries, or crushed graham crackers for extra flair.
